Orange Chocolate Bundt Cakes

Sensory Objectives

Zesting the orange will release oils and there will be an intense orange scent, and the zest will even feel oily. The batter will become very light and fluffy. Feel the batter.

Speech Objectives

Why is it called a cake? Should it be a bread? It might just be the shape of the pan.

Ingredients

  • 1 ½ Cups Unsalted Butter

  • 1 ½ Cups sugar, divided

  • 2 oranges

  • 2 tsp. grand Marnier

  • 8 eggs at room temp, separated

  • 2 cups cake flour, sifted

  • ½ tsp salt

  • 7 ounces mini chocolate chips

  • 1 TSP flour


Instructions

Prep Oranges - Zest 2 oranges, then juice them. Put All Zest in liquid measuring cup and add juice to make 1/3 cup total. Set aside. Cream Butter, slowly. beat in 1¼ cup sugar. Next beat in Zest/OJ mixture and Grand Marnier. Add yolks one at a time, beating well after each yolk. Beat on high for several minutes until very light in color.

In another bowl, beat egg whites until they form soft peaks. Then add remaining ¼ cup sugar and beat until stiff peaks form. Combine cake flour and salt in sifter and sift 1/3 of flour over egg and orange mixture, fold in flour. continue two more times until all flour is added.

Next, stir in ¼ of egg whites and then gently fold in remaining whites. Cover Mini chips with I tsp of flour and toss gently. Add chips to cake batter. Gently fold into batter. Grease and flour 6 small loaf pans or one large fluted pan. Place in oven and bake about 45 mins for loaves and about 1 hour if using a cake pan. When a toothpick inserted in the middle, comes out clean, the cake is done. Let cake sit for 5 min and then turn out of pan. You can leave mini loaves in the loaf pans or remove. Enjoy!
