Italian Chopped Salad

Sensory Objectives

Tasting this salad, you will find a wide variety of textures. Some vegetables will be raw, some blanched. They will all be crunchy! The white beans will be cooked. The cheese will be smooth.

Speech Objectives

This is another great example of eating from the rainbow. What does that mean? Eating lots of brightly colored food. What else could we add? What might you take out because it isn’t your favorite?

Ingredients

  • ¼ Lb. Uncured Salami cut in strips

  • 1 can white Beans, rinsed and drained

  • 2 TBsp pepperoncini pepper rings with juice

  • ¼ C. pitted olives, cut in half

  • ½ C. Fresh mozzarella, cubed

  • 3 C. Blanched Assorted Green vegetables

  • 2 C. Chopped raw Peppers (any COlor)

  • 1 c. Cherry Tomatoes, halved

  • 1 Tbsp. Fresh chopped basil


Instructions

The oil from the olives and the juice from the peppers may be enough to dress the salad. If you like more dressing your favorite balsamic dressing or just a little balsamic vinegar can be added. Season with salt and pepper, don’t over salt, remember there are many salty Ingredients.

Combine all ingredients, gently toss with dressing and enjoy!
