Cream Cheese Cupcakes

Sensory Objectives

Let’s compare the smell of vinegar to vanilla. The recipe needs both. You will not be able to pick out either when the cakes are made, but we need both for flavor. Would nuts or sugar change the texture?

Speech Objectives

What will the cream cheese mixture do? What does “black bottom” mean? Discuss the word “texture” in the way it is used in sensory objectives.

Ingredients

  • 1 ½ c flour

  • 1 c Sugar

  • ¼ c unsweetened Cocoa

  • 1 tsp Baking soda

  • ½ tsp salt

  • 1 c water

  • 1/3 c oil

  • 1 tsp vinegar

  • 1 tsp vanilla

  • 1-8 oz Pkg cream cheese

  • 1 egg

  • Dash of salt

  • 1 c mini semi sweet choc chips

  • 1/3 c sugar


Instructions

Combine ingredients for cupcakes. Beat with hand mixer on medium speed just until well blended, 1 min.

Spoon mixture into muffin tins lined with cupcake papers, fill just over ½ full Then add 1 TBSP of the cream cheese mixture in the middle of each cupcake sprinkle with nuts and/or course sugar (optional)

Bake at 350 degrees for 30-35 min You can try to insert a toothpick to check doneness but may not come out clean because of cream cheese. Makes about 16-20 cupcakes
