Cheese and Bacon Egg Bake

The bacon is a little slippery to cut, might be easier partially frozen. Lots of smells with this! Bacon as well as garlic and onion powder smell strong. When eating there are several different textures combined

Ingredients

  • 9 Large eggs

  • 2 cups of milk

  • 2 cups of shredded sharp cheddar cheese

  • 1 pound thick cut bacon

  • 1 bag frozen shredded hashbrowns

  • 1 tsp. garlic powder

  • 1 tsp. onion powder

  • black pepper


Instructions

Preheat oven and grease a 9” X 13” baking pan. Cut bacon into pieces and fry in a large frying pan, until brown. Then place on paper towel to drain. Wipe out most of the grease from the frying pan. Next Add hash browns to the pan and fry until just starting to brown. Mostly this is just to get the potatoes slightly cooked and the moisture out of the potatoes. Add Bacon back into cooked potatoes. Pour bacon and potatoes into greased pan. Then sprinkle evenly with shredded cheese.

Into a large bowl crack eggs, whisk slightly add Milk, Garlic and onion powder and Pepper. whisk until well blended. Then pour mixture evenly over hash browns and cheese. Bake 50-60 min until middle is firm.

Serve immediately, store extras in the fridge, Egg Bake reheats nicely. We keep it around pretty regularly works for any meal or a snack. Great with Salsa, you can also add herbs, different cheeses, sausage and/or ham instead of or in addition to bacon. Onion and Red or green pepper work great too.
