Healthier Muffins

Sensory Objectives

Cinnamon and pumpkin pie spice will make these smell yummy as they bake. The batter will look brown and lumpy, but when baked they will look delicious and toasty brown.

Speech Objectives

Look at the ingredients – what makes these healthier than other muffins? What other dried fruit could you use instead of cranberries? When would these be good to serve? What other foods would these be good with?



Instructions

In a medium bowl combine oatmeal, bran cereal, bananas, orange juice, dry milk powder and brown sugar. Add egg and oil and mix well.

In a small bowl whisk together the flour baking powder, baking soda, salt, cinnamon, and pumpkin pie spice. Add to oatmeal mixture. Mix until moistened. Stir in dried fruit and nuts.

Fill muffin cups to about 2/3 full. Bake at 400 degrees for 12-15 minutes. Makes 12-15 muffins.
